Chicken Cæsar Salad
This makes a light entrée or a great cold lunch. For an entrée, serve with garlic cheese toast. This makes one serving; it can be mutiplied as needed.
- Lettuce, torn and washed (hearts of Romain are the right item for this)
- 3 oz by weight rotisserie chicken breast or baked chicken breast per serving
- Cæsar dressing
- Parmigiana-Reggiano cheese, freshly grated *
- Garlic croûtons
Cut the chicken into bite-sized pieces, Put enough lettuce to mostly fill a large salad bowl, add the chicken; add 2 or 3 TB Cæsar dressing and toss to mix. You don't need much dressing. If you think you need more, taste first.
Sprinkle an ounce or more of the grated cheese, to taste. Add salt and pepper to taste and sprinkle liberally with croûtons.
I'm happy with Kroger's Cæsar croûtons, and like to put some bite-sized pieces of tomato on the salad before the cheese. Your preference may vary.
* You could use grocery store "Parmesan" cheese, but you'll be much happier with the real thing, even though, pound for pound, it costs as much as beef tenderloin.
